Ingredients:
1 cup shortening (I used
real butter)
1 cup brown sugar1 cup white sugar
2 eggs
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
2 cups quick cooking oatmeal, uncooked
2 cups crispy rice cereal
1 cup flaked coconut
* chocolate chips (original recipe didn’t call for these but you can’t go wrong by adding them)
Directions:
- Cream shortening; add sugars and beat well.
- Add eggs and vanilla.
- Sift flour with soda and salt. Add to creamed mixture.
- Add cereal, coconut and oatmeal and mix well.
- Drop batter from a spoon onto a greased cookie sheet. ( I used one of those nifty little food serving scoops and they all came out pretty and uniform.)
- Bake at 375 degrees for 12 minutes.
