Touchdown Taco Dip

Ingredients:
8 oz. cream cheese, softened
1/2 tsp. garlic powder
Blend garlic into cheese with a hand mixer.

1 can re-fried beans
2 tsp. chili powder

1.     Blend together by hand and spread into a greased 8x8 glass dish.
2.     Spread cream cheese mixture over beans.
3.     Sprinkle ½ -1 cup shredded cheddar or Mexican blend cheese over cream cheese.
4.     Garnish with dried chives or fresh chopped green onions on top.
5.     Heat in oven (uncovered) for 15-20 minutes until cheese melts.
6.     Serve with tortilla chips.

Ranch Cheddar Cheeseball

Ingredients:
1 (4 oz.) package buttermilk ranch dressing
1 T. sour cream
8 oz. cream cheese
1/2 lb. shredded cheddar cheese
2 T. jalapeno relish (this is my addition)
enough chopped pecans to roll the ball in.
Directions:
Mix ranch packet and sour cream.  Add cream cheese.  Mix well and add cheese.  Roll into a ball and then roll in pecans.

Cashew Chicken Dip

Ingredients
:
4 (8oz) pkgs cream cheese, softened
1 can cashews
1 bunch of green onions
1 large can chicken breast, drained
soy sauce - to taste (at least 4-5 Tbs or more)

Directions:
1. Grind up most of cashews and green onions (reserve a few of each for garnish) with chicken breast meat.
2. Mix in soy sauce and cream cheese and form into ball or pat down into bowl. Garnish with remaining cashews and chopped onion greens. Serve with crackers.

Note from Debi: This is wonderful! It makes a pretty large amount. If you use the "salted" cashews, I think I would back off on the soy sauce, but taste often to see. Rhonda said she has used the cans of chicken already ground (thinks its "chicken spread or something like that), but you'll have to use more than one to get the same amount of chicken. Enjoy!

Italian Rollups

Ingredients:
pkg of butter flake crescent rolls
pizza sauce
shredded cheese
Italian seasoning, to taste

Directions:
1. Unroll dough
2. Spread pizza sauce, cheese and Italian seasoning on dough
3. Roll up and cook a few minutes longer than directed on the can

Avocado Salsa

Ingredients:
3 avocados, cubed
4 medium tomatoes, chopped
1 medium white onion, chopped
cilantro, sprinkle to taste

Directions:
1. Combine all ingredients.
2. Serve immediately with tortilla chips.
