Ingredients:
1 1/4 cups whole wheat flour (didn't have so used white)
1 1/4 cups uncooked oatmeal
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 cup unsweetened applesauce
1 tsp. vanilla
1/2 cup low-fat buttermilk
1/2 cup firmly packed brown sugar
2 T. oil (I use Smart Balance cooking oil)
1 large egg, slightly beaten
1/2 cup raisins, if desired
Directions:
1. Preheat oven to 400 degrees.
2. Line a 12 cup muffin tin with cupcake papers or spray with nonstick cooking spray.
3. In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
4. Add applesauce, buttermilk, sugar, oil, vanilla and egg.
5. Stir just until moist.
6. Fold in raisins.
7. Fill muffin cups 2/3 full.
8. Bake for 16-18 minutes.
These are very moist and tasty.
