Ingredients:
1 package cornbread mix (I use Jiffy)
1 can cream corn
1 can corn, drained
1/2 red or green pepper OR for spicy version, 2 T. jalapenos (I omitted this step)
1/2 cup onion, finely chopped
3 eggs
1 stick butter
Directions:
- Melt butter and cook onions and pepper until tender. (can do this step in the microwave)
- Add the rest of the ingredients and place in a 9x13 pan.
- Bake at 350 degrees for 30 minutes.
